[Voyage-linux] 'var' directory : I'm very confused

I install squid. Squid creates the /var/log/squid directory. I reboot 
voyage linux. /var/log/squid directory (and files contained in it) no 
more exists, and squid doesn't start anymore.
What is the problem? Why voyage linux deletes the /var/log/squid 
directory at each reboot?
Furthermore, I want to keep my access.log file for a number of days: I 
don't want this file be deleted at each reboot.
Another question : why voyage linux always starts 'read only' ? Can I 
schedule the 'remountrw' command at each boot? This is not for my 
comfort, I only want to be sure that a daemon or a program can write 
where it needs to write.
