First of all, thank you very much for your answers :-)

Ok, but what appens to my 'new' logs, after a reboot?
in other words: after apt-get install, I copy /var/log/squid to
/ro/var/log/squid. Then I begin to use squid; new logs are written (for
instance) in /var/log/squid/access.log .
On next reboot, my 'new' access.log will be lost, and the 'original'
(empty) access.log will be restored . Correct?

Seems like this one could be a solution to my problem. In this moment I
haven't a 'voyage.conf' to consult.
Are the VOYAGE_SYSTEM_SYNCDIRS synced (copied from /rw to /ro) each time
I 'poweroff' the system?

Ok I will take a look.
Tank you very much.
