Hi Gustin,
Usually dynamic dns work fine. Here in Spain sometimes we have
problems with ICMP messages over 3g connections so I use curl or wget
to test the connection instead of pings (and to check if the
connection is still alive ;) ). You can also try to enable the debug
output of pppd and check if it prints something useful.

There are several ways to connect on boot. I usually make a startup
script in /etc/init.d and link it using update-rc.d. But it's up to
you, there are many other ways to solve this problem.
