Hey Gustin,
Thanks for the informative reply as ever, I appreciate it. I hate to admit this to you but we're primarily Windows users here so we simply use a notebook booted from the live-cd to build new compact flash cards with voyage, nothing more so performance on the odd occasion we do it is not really so important.
I thought it might be a kernel issue. I did read lots of people saying that I would be able to set the NOAPIC from the grub boot menu to get it up and running but I couldn't figure out how to get to the grub boot menu to make that entry? Do I have a key I need to mash as it's booting to get there?
Appreciate any further advice.

Yes and yes. You need a newer kernel for these laptops to avoid this
error. When the CD is booting, you should be able to get a grub menu
where you can edit the kernel line, this is where you want to put NOAPIC.
Having said that, not using the APIC is going to have serious
performance issues, in my experience it just does not "feel" right. I
would not put machines that need this hack into any kind of production
role. Of course YMMV.
