Never really done that since I am in the lucky position of controlling
the network, or at least having access to the people who do control the
network.

I do this since I often customize how a machine connects to a DHCP
served network (replace, prepend, or append dns server or search
domains, hostname, mac address etc.) Whether you do it depends entirely
on your needs. I am very comfortable with dhclient and I connect these
devices to a variety of networks, often in remote places.

The other advantage is that we only have one dhcp client to train more
junior people on.

remountrw first. After that an "aptitude install dhcp3-client" should
do the trick.
